Also known as Bai Mu Dan, Peony white tea leaves are plucked from a special varietal tea bush called Narcissus or chaicha bushes. Secondly the leaves are not steamed or pan-fired (the process used in green teas). The leaves are naturally withered and dried in the sun. Thirdly only special ‘two leaves and a bud’ are selected. These leaves must show a very light green almost gray white color and be covered with velvet peach fuzz down.
It also makes very refreshing iced tea. To conclude, Peony is a very well balanced white tea with good body and flavor.

Snowbud White Tea is delicate and light. It brews a very bright cup that is crisp and fresh. The flavor is mellow with floral hints. When brewed, the leaves return to life and are emerald green.
The method of manufacture of this tea is quite interesting. The bud and the first leaf of new shoots of the tea bush are hand picked during the last two weeks of March and the first week of April. Only certain tea bushes grow the leaf that is required for this tea. The leaves are plucked between 3:30: am and 7:00 am when the dew is heavy on the leaves. These leaves are rushed to the tea factory where they are re-sorted and hand rolled ever so slightly. The leaves are then immediately steamed to capture the cool and crisp pre-dawn taste. Note that some of the leaves are covered with a ‘white down’. This signifies new, fresh and pure - characteristics that are held in high regards by those striving for the ultimate in tea quality.

Our exquisite Aged Silver Needle tea from Fujian China has been aged for more than 5 years. Unbeknownst to many tea drinkers in the West, similar to green Pu-erh and some darker Oolong teas, White teas can actually be aged. When stored right, White Teas will continue to oxidized slowly and develop a different taste profile. The result is a richer and more mellow taste. Our Aged Silver Needle is deeply mellow with much less of the greenness. The taste is more honey like but less floral. The tea leaves have a reddish tone and just a tiny bit of green left in them. The color of the infusion is amber. Another fine example of Fujian white tea. This is truly an extraordinary tea.
This special Aged Snowbud white tea from Fujian China has been aged for more than 5 years. It brews a cup that is deeply mellow with light floral notes and hints of walnut. There is very little astringency due to the aged process. It is a very forgiving tea. The taste profile is very consistent, even when over brewed (steeped for too long) it still holds up well and doesn't get too astringent.

Our Silver Needle brews a cup that has delicate lingering fragrance and fresh mellow sweet taste devoid of astringency or grassy flavor. It is smooth, and refreshing.
Silver Needle White Tea is the top grade available. This delicate tea is produced in a very short period in early Spring, when the young buds are in their prime condition. You will see two intact grayish white leaves that surround a silver bud. The two leaves and a bud that adhere to the stem in a uniform manner are covered with a silvery white down.
